I've always had a softspot for comedic characters and responses, as well as characters whose skillset involved manipulating their body in some form.
I also enjoy the nature-loving archetypes, a good example being the kind of Druid D&D popularized.
As for most engaging, I especially enjoy when I see martial arts that aren't just DBZ level mindless punches and kicks and other things popularized by anime and manga. Granted, I like the ORAORAORAORA as much as the next guy, but it's one of those things where if used too much without context, it can quickly turn stale.
Sometimes when I feeling inspired. I take a trope from TV tropes and give them a fun original twist and then give them a backstory to flesh them out. You can get some fun, easy to play simple characters out of it. I haven't done it in the while. It's mainly been "How can I do this stupid idea and make it viable?"
The role plays I enjoy reading the most, well I have 2.
1. The one-liner/first person RPer who improves drastically by improving their writing talents. It's always a joy to see.
2. Characters with a lot of depth. You can really understand their mindset, their wants and goals. You can always root for them.
Someone who can be a good friend.

Manipulators (Who don't use magic or poisons to metagame or god mod.) Comic relief
